Pumpkin Lasagna
Serves: 4 Cook: 40 min
Ingredients:
200 g fresh pasta, 100 g of grated cheese, 500 g pumpkin, 250 ml vegetable bechamel, oil, salt and nutmeg as required
Steps:
Clean the pumpkin and cut into pieces. Cook in a bowl with a bit of water on Power 80 for 5 minutes. Place pumpkin in mixer with cooking water, add salt, nutmeg and blend. Place a layer of the pumpkin mixture in a tray and then a layer of fresh pasta. Add pumpkin cream, vegetable bechamel and some grated cheese. Proceed with alternating layers until ingredients are used up, leaving the last sheet of pasta completely covered by liquid ingredients. Dust with grated cheese, a dash of oil on the last layer and place in oven at 190°C for 25-30 minutes, depending on number of layers.
Stuffed courgettes
Serves: 2 Cook: 25 min
Ingredients:
120g of buckwheat, 2 round courgettes, 20 g of peeled walnuts, 250 g of cherry tomatoes, 5 basil leaves, oil and salt as required
Steps:
Cut off upper part of courgettes and using a spoon, empty the inside, making them into a small container. Cut the courgette flesh into small pieces. Cut the cherry tomatoes into pieces and chop the walnuts. Place the emptied courgettes in the microwave and cook on power 80 for 5 minutes. Cook the buckwheat on Power 100 for 10 minutes in a bowl, adding a glass of water. Cook the courgette flesh for 5 minutes on Power 50. Leave to rest for 3 minutes. Dress the cooked buckwheat with oil and salt and add chopped basil, courgette flesh, cherry tomatoes and chopped walnuts. Mix, add salt and leave to rest for 10 minutes. Stuff courgettes and serve.
Chocolate cake in a mug
Serves: 2 Cook: 10 min
Ingredients:
4 tablespoons of gluten-free flour, 2 tablespoons of cocoa, 2 tablespoons of sugar, 1 teaspoon of baking powder, 1 egg, 10 g of melted butter
Steps:
Beat the egg and sugar together in a large cup or bowl. Stir while adding flour and baking powder. Add cocoa a little at a time, continuing to turn and melt butter on Power 50 for 1 minute. Add the melted butter to the mix and continue stirring until the mixture is smooth. Cook on P100 for 3 minutes. Leave to rest for 2 minutes in the oven, then take out and leave to cool before eating.
