Recipes ideal for autumn time
Unfortunately, the summer is over and with it the holidays! Fortunately, autumn also brings good things, such as some ideal ingredients to prepare delicious seasonal dishes! And don't worry, they are not long and complicated recipes, but simple dishes that you can cook with your microwave and won’t disappoint your guests!
Julienne Peppers
Serves: 4 Time: 17 min
Ingredients:
1 red pepper, 1 yellow pepper, 60 g of green olives, giant capers, 4 spoons of extra virgin olive oil, a few strands of chives, 1 fresh spring onion, 60 g of tuna, salt as required
Steps:
Wash and cut the peppers in half lengthways and remove seeds and filaments inside. Cut the peppers vertically into 4 pieces, place on a microwave-safe plate and cook on P80 (750watt) for 5 minutes. Remove from microwave and peel. Cut into 2 cm strips and leave to cool. Add the pitted olives, capers, oil, a pinch of salt, the chopped up spring onion and the tuna. Mix it all together, leave to rest for at least half an hour, add chopped up spring onion and serve.
Cream of Aubergine
Serves: 4 Time: 10 min
Ingredients:
2 large aubergines, 2 cloves of garlic, tahini, 1 piece of ginger, oil as required, a few basil leaves
Steps:
Wash, dry and clean the aubergines and ginger. Peel the garlic and chop up the basil. Cut the aubergines in half, place on a microwave-safe tray and prick with a fork to let out steam during cooking. Cook for 5 minutes on P80, leave to rest for 3 minutes. Using a spoon, dig out the aubergine flesh from the outer skin. Place flesh in a mixer with garlic, tahini, grated ginger, chopped up basil, oil and salt. Blend together until creamy. Serve with toast.
Courgette flan
Serves: 2 Time: 20 min
Ingredients:
1 courgette, 100 g of herbs, 100 g of breadcrumbs, 3 tablespoons of liquid cream, 50 g of ricotta, 20 g of butter, oil and salt as required, 1 egg
Steps:
Wash, dry and clean the courgettes and herbs. Cut the courgettes into small strips. In a mixer, blend cream with courgettes and herbs, add oil and salt. Melt butter on P50 for 2 minutes. In a bowl, mix the ricotta with the egg, melted butter, breadcrumbs and grated cheese. Mix the mixture with the vegetables and mix with a fork until smooth. Place the cream in a terrine and cook on P80 for 6 minutes. Leave to rest for 3 minutes.
Pumpkin with rosemary
Serves: 2 Time: 15 min
Ingredients:
200 g of pumpkin, fresh rosemary to taste, 50 ml of rosè wine, oil and salt to taste
Steps:
Clean the pumpkin and cut into pieces. Wash and dry the rosemary before removing the leaves and discarding the stalk. Place the pumpkin and a dash of oil in a microwave-safe baking tray and cook for 5 minutes on P80. Remove from the oven and add the rosemary, wine and salt. Cook for an additional 4 minutes on P100. Allow to rest for 3 minutes with the microwave door closed before serving.
Spinach pie
Serves: 2 Time: 20 min
Ingredients:
1 potato, 100 g of spinach, 2 tablespoons of flour with yeast, 150 ml of vegetable bechamel
salt, oil and pepper as required, sage leaves
Steps:
Wash and peel the potato. Dice and cook in a bowl with water on P80 for 5 minutes, rest for 2 minutes. Wash and cook spinach in a bowl with water, for 3 minutes on P80 and rest for 2 minutes. Chop the sage. Put the diced potato, spinach, sage, oil and salt and pepper in the mixer. Blend until smooth. Mix the liquid mixture and add self-raising flour, continuing to mix. If the mixture is too dense, add a tablespoon of water. Pour into a greased, high microwave-safe container and cook on P80 for 5 minutes. Leave to rest for one minute and serve hot.
